Creamy chicken and spinach lasagne

Light and comforting, with tender chicken and spinach folded into a creamy white sauce.

Ingredients
  

  • 500 g chicken breast cooked and shredded
  • 2 tbsp olive oil
  • 1 onion finely chopped
  • 2 cloves garlic crushed
  • 200 g baby spinach
  • 50 g butter
  • 50 g flour
  • 750 ml milk
  • 200 ml cream
  • 200 g mozzarella grated
  • 100 g cheddar grated
  • 250 g Serena lasagne sheets

Instructions
 

  • Preheat oven to 180 °C.
  • Heat oil in a pan, sauté onion and garlic until soft. Add chicken and spinach, season well.
    2 tbsp olive oil, 1 onion, 2 cloves garlic, 200 g baby spinach, 500 g chicken breast
  • Make a white sauce: melt butter, whisk in flour, then slowly add milk until smooth. Stir in cream.
    50 g butter, 50 g flour, 750 ml milk, 200 ml cream
  • Layer lasagne sheets, chicken mixture, white sauce and cheese in a baking dish. Repeat. Finish with cheese on top.
    200 g mozzarella, 250 g Serena lasagne sheets, 100 g cheddar
  • Bake for 35–40 minutes until golden and bubbling.
